Blueberry Pancakes with Icing

Jars: Makes 2 Pint Sized

Pancakes:

½ cup flour (we recommend almond flour), ¼ cup per jar

2 eggs (one per jar)

⅔ cup blueberries (⅓ cup per jar)

2 Tbsp Ground Flaxseed (1 Tbsp per jar)

2 tsp Coconut oil (1 tsp per jar)

1 tsp cinnamon (½ tsp per jar)

2 tsp stevia (1 tsp per jar)

Icing:

1 Tbsp Coconut Oil, melted

2 ounces cream cheese

1 tbsp stevia

½ tsp vanilla

Combine all ingredients in jar and when ready to eat microwave for 2 mins and enjoy!

Top with 1-2 Tbsp Icing
