. Grain-free granola made in the crockpot 😳 omg it is the most delicious snack ever!
1/3 cup coconut oil 1 tsp vanilla extract 2 cups raw nuts (we did 1/2 cup each of almonds and walnuts and 1 cup of pecans but you can adjust/add any nuts you would like) 1 cup raw pumpkin seeds 1 cup raw sunflower seeds 2 tbsp honey 🍯 1 tsp cinnamon 1 tsp salt
Sugar-free option: 1/8 cup swerve (granulated is best for granola clumps) or 3-4 packets of stevia in place of the honey Optional: 1 cup shredded coconut (we didn't have any so we left it out) *make sure you use UNSALTED nuts and seeds or the granola won't stick together once it's done!
1. Turn crockpot on low and add melted coconut oil. 2. Add vanilla. 3. Stir well before adding nuts, seeds and coconut. 4. Stir mixture well to make sure all the huts and seeds are coated. 5. Whisk in honey or sugar free options. 6. Add cinnamon and salt. 7. Cover and cook on low for 2 hours, stirring every 30 minutes until they appear brown and toasted! Not burnt! 8. Pour mixture onto baking sheet and place in the refrigerator to have granola chunks stick together.
Play with this recipe by adding some chocolate pieces after it has been refrigerated or add in some pumpkin pie spice for a fall flavor!
